An Apple Touch Icon is the image displayed when a user saves a website to their iPhone or iPad's home screen. It's specified via <link rel='apple-touch-icon'> in the HTML head and should be a 180×180px PNG image, typically your brand logo.

How to Check Your Store

How to Fix It
In Shopify admin > Online Store > Themes > Customize, look for 'Favicon' settings. Upload a square PNG image (at least 180×180px) of your logo. Shopify will use this as both the browser favicon and the Apple touch icon.
